      A rich, rounded cheddar with a complex balance of flavours. Matured for 18 to 21 months

    • Blue Monday

      Named after the new order anthem, the cheese is smooth and salty Much like a continental blue, using a selected and unique blue culture which gives a more powerful tang.

    • Perl Wen

      A welsh brie that is creamy and buttery in taste, but also has a lemony, salty centre that is reminiscent of Caerphilly

    • Burts Blue

      A local Cheshire blue that is creamy and mellow with an unusual rind which and strong blue taste which deepens with every bite

    • Sparkenhoe red Leicester

      A traditional farmhouse red Leicester, the distinctive red colour comes from the addition of harmless vegetable dye called annatto, a tradition that stretches back to the 17th century when a rich golden colour was seen as a sign of quality.
